Hello you guys,
Here is the recipe for some old-fashion mouth-watering Madeleine. This is so easy, it will make you laugh ![]()
The recipe calls for a 12-hole madeleine mould, but my mould has 20 holes and I’ve filled it twice. So what I ended up with is some MINI Madeleines.
Well.. you know what they say – Best things come in small packages!
100g plain flour, plus extra for dusting
100g caster sugar
100g butter, melted
1 whole egg, separated, plus 1 egg white
1 tbsp clear honey
1 tbsp vanilla extract
1.Heat oven to 190 C. Butter a 12-hole madeleine mould (or use tartlet tins if you don’t have the moulds) and dust lightly with flour.
2.Mix the flour and sugar in a bowl. Put the butter, egg yolk, honey and vanilla into a separate bowl and whisk with a fork to mix.
Whisk the two eggs white until stiff.
Fold the butter mixture into the dry ingredients until evenly mixed, then fold in the eggs white in two batches using the whisk.
3.Divide between the prepared moulds and bake for 12-15 mins until golden brown and firm to the touch.
Leave to cool in the moulds for a few mins, then turn out and cool on a wire rack. Dust with icing sugar before serving.
